And now for another episode of Cooking with Jaypoc….

I wasn’t as happy tonight. The food tasted great, but the chicken was too well done.

I made my famous coconut chicken… Chicken cutlets soaked in Malibu Coconut Rum for approximately a half hour (or more if you have time. I didn’t. Dad was hungry!) and then cook in a frying pan over pineapples…BUT, I didn’t have pineapples so I tried it over cantaloupe. The only fruit we had in the house. Time to go food shopping!

I think I’ll stick to the pineapples as the cantaloupe didn’t add as much as the pineapple does.

I served it with cooked green-beans (yuck! I don’t eat anything green unless raw. It’s a rule I rarely break) and Shrimp Cocktail appetizer (Cleverly arranged around a large martini glass with the cocktail sauce in the glass. Altogether, the meal was pretty good.

So, when are you coming over for supper? 🙂
